Hi Ellen, M4M has the xanthan gum already added, so it's a simple 1:1 swap out. With the GF Flour, you have to do a little more and have xanthan on hand, plus play with the xanthan amount a bit depending on the recipe. Also, M4M may not be your first choice for yeast bread recipes that aren't GF to begin with. Hope this helps. ~ MJ
