Hi Kathleen, I'm not exactly sure how your bakery gets their scones so large, and it might have more to do with their recipe than the actual size of the scones before baking, but you can certainly cut larger pieces when making our scones, and doubling the recipe to do so would also work fine. However, I would be a bit wary of making the scones a lot thicker in order to make them more "lofty," since fatter scones are going to require a longer baking time and may get too dark on the bottom/outside as a result. For best results when making our scone recipes I would recommend sticking to the size pieces recommended.
