Hi there, Fred! The ceramic scone pan is ideal for drop scones, each well holds approximately 1/4 cup of dough. When using the pan, you can scoop your dough into the wells and then use wet hands to gently pat the dough into the corner of each triangle. You can use it for scones that you've cut into wedges as well, in this case the pan will help to make for taller scones as the sides provide support. We hope this helps to clarify and happy baking!
