We were saddened the first time we heard about your gooey choux on Facebook, and we're sorry to hear about it again. We saw the photo you shared on Facebook, and the puff loaves sure did look absolutely beautiful. We're wondering if perhaps your oven was running a little low and didn't bake the bottom layer of pastry fully? You might be able to re-crisp the pastries by covering the tops with foil and baking for another 5-10 minutes. (A baking stone would be especially helpful here.)
