We were saddened the first time we heard about your gooey choux on Facebook, and we're sorry to hear about it again. We saw the photo you shared on Facebook, and the puff loaves sure did look absolutely beautiful. We're wondering if perhaps your oven was running a little low and didn't bake the bottom layer of pastry fully? You might be able to re-crisp the pastries by covering the tops with foil and baking for another 5-10 minutes. (A baking stone would be especially helpful here.) We realize how let down you must feel, and we genuinely apologize for this experience. If there's any way we can help ensure your next bake is a more pleasant one, don't hesitate to let us know.
