Your manifesto on sourdough starter resuscitation is excellent. Additionally the the time-lapse video on assessing the ripeness of starter is pure gold. I had sourdough in various stages of "maturity" in my fridge from my mostly disappointing attempts at making sourdough bread leading me to believe it was an elusive unicorn. Using this excellent article coupled with your no-knead sourdough recipe.....SUCCESS! I also learned that I had a most excellent proofing cabinet: an upper kitchen cabinet with an attached under cabinet light. (We keep our home quite cool in the winter). When the light is on, they warm up the lower base of the cabinet they are attached to. Others may have the same set up and benefit! Both my starter and my dough feel effervescently happy in this warm spa environment, and I finally achieved the results that I have been looking for.
