This seems silly, but when I want to take my active starter out for a recipe (and it's at its peak, it's doubled and bubbly), do I stir it first and then take what amount I need? Or do I essentially just start scooping it out (I'm using a wooden spoon at this point)? I know stirring deflates it, so wasn't sure if that disturbs the activity prior to putting into a recipe. (Although I suppose you mix it in the recipe, so maybe I'm reading too much into it). Thank you :)
