Hi, and help. A friend gave me some of her sourdough stuff. I kept it in the fridge a day or two before feeding. I sat it on the counter and it doubled that day. I left it out, and it had sunk in the am. SO, I fed it again, waited until tonight, and as it has doubled again (and maybe a bit more) I put it in the fridge. When can I make something? I want to make pancakes, but it looks like I need to make a sponge first? So can I make the sponge tomorrow night for pancakes on Friday? Sorry, it is very confusing to me!
