Hi there! I can not seem to get a straight answer anywhere online about WHY sourdough starter is discarded. Can someone explain? Is it just because you end up with too much? Is there a scientific reason? I'm not opposed to using the discard in other ways, but I just don't understand why it needs to be taken out. Thanks!
