Hello, I’m on day 3 of my 2x daily feedings and i finally saw my starter double in size two hours after I fed it. 8 hours after seeing the dramatic rise it has now completely fallen back to the original marked level. Am i doing something wrong? when do i know its ripe and ready to bake bread with?
