Hi Nancy! You will want to keep your sourdough starter covered so it doesn't dry out. If you're using a canning jar, we recommend not tightening the lid all the way so that there is some gas exchange or if the vessel you're using doesn't have a lid you can keep it covered with plastic wrap.
