Hi Susan, not all cheesecake recipes require a water bath, but the typical process involves enclosing the outside of your cheesecake pan in foil (so no water leaks in) and then placing your cheesecake batter and pan in a larger pan in the oven, to which you carefully add boiling water. The water should reach about halfway up the side of your cheesecake pan. The water remains for the duration of the bake, but baking time will likely be longer because the water serves to moderate the baking temperature.
