My mother, who was a home economics professor in the 1940’s, taught me to bake by weight when I was a child, over 60 years ago. My most cherished possession when I left home was my own (spring balance) gram scale. I’m so glad that more and more recipes these days (and yours, of course) include ingredients by weight! I love the convenience and the reproducibility (and digital scales with the “tare” feature). I haven’t needed to scale recipes up or down (I have her collection of baking pans), but I’ve loved knowing I could do it easily when needed.
