We definitely recommend investing in a scale, Penny, especially when it comes to measuring flour, as it takes out the guesswork out of determining how the recipe writer measured their ingredients. In the meantime, we do also have an Ingredient Weight Chart which can offer some guidance for conversions. Just keep in mind that the weights for flour are based on our measuring technique, not necessarily that of your Scottish cookbook author. Hope this helps and happy baking! Mollie@KAF
