PJ This looks great but I have a problem with the basic assumption. Flour changes weight with climate and altitude. My flour is MUCH lighter than yours. I live at 4500 ft in Colorado. The climate here is considered desert. So, let's establish what 1 cup of your flour would weigh. I can then compare what 1 cup of my flour weighs and make adjustments as needed! Thanks! Linda M
