Hi there, Lisa! Coffee extract would be a great way to make cappuccino or coffee-flavored muffins. You could also add a bit of espresso powder to your dry ingredients, try 2 teaspoons to 1 tablespoon depending on how strong you'd like the flavor to be. I've also seen mocha chips in the baking aisle at the grocery store, I haven't tried them yet but that would be another option. Happy experimenting!
