We're sorry to hear that your muffins didn't turn out as expected, Lenore! It sounds like the applesauce substitution was what led to the dry texture. While you certainly can use applesauce in place of the oil, you'll want to make an equal swap rather than using just 1 tablespoon of applesauce. We'd suggest giving the recipe a go again with 1/4 cup of applesauce in place of the oil. We hope this helps for future baking adventures!
