Hi Evan, we appreciate your passion on this issue. Deciding what we eat is an incredibly personal choice. Growing Certified Organic grains costs farmers more, as the methods of farming have to completely shift. It is important to us to pay those farmers and mills extra for the grains that cost them more to grow. This cost will inevitably affect the cost of the flour on the shelf, but this is certainly not an arbitrary premium. We would never presume to tell bakers what to eat, so we're happy to provide many options that fit a variety of lifestyles.
