Hi Paul, Sorry for any confusion, but the IP Wheat is 100% whole grain, 100% of the wheat berry. The "identity" in Identity Preserved refers to the fact that we can track the flour in a bag right back to the distributor, back to the mill, down to the farm, and all the way to the seed.
