It is not considered Whole Grain. Seems deceptive to call this product Identity Preserved if a portion of the kernel is removed. What percentage is filtered out? Do we know how much of this wheat variety's identity is lost in pre-soaking and metal roller milling. King Arthur could be leading the way in restoring quality and nutrition to our country's flour.
