Hi Philip,
Because seeds have been changing naturally over decades due to natural selection and scientific hybridization, it's nearly impossible to tell which exact strains may have been used at any given time. It's also hard to tell if there would be noticeable difference in flavor or texture as you'd really need to run side by side tests to check out the results.
That being said, there are some growers out there who grow heritage wheat varieties. We'd encourage you to try some and see how you like it in your kitchen. ~ MJ
