I commend you on coming out with producing wholesome wheat products. Is this wheat produced from modified wheat that has been genetically altered to create more gluten in the end product? I use your flour for my baking as it makes the best breads. However, my daughter, an adult, has developed a serious allergy to wheat. Other friends of mine also developed allergies to wheat. Did you know that Oxford University presented a study years ago that wheat as we know it today is not the wheat grown a century ago. They tested the remains of centuries old thatched roofs which contained enough strands of wheat to test, and found that today's wheat has been dramatically altered to increase gluten in wheat to fill the tummies of increasing populations. Not good. It has caused a reaction in greater demand for gluten free products.
