I tried using the egg white wash prior to par-baking the crust. I brushed the raw crust with the egg white, then laid over the parchment, filled with dried beans and baked. When I went to remove the parchment/beans it was pulled up the crust on the bottom of the pan. I did piece it back together, but it definitely was not as intended. Should the egg wash be put on prior to chilling the crust, then add the parchment/beans? Or does this method not work if using weights?
