I love this recipe and make the bread often! When I add cheese or an everything-bagel topping, I like to substitute 1 cup of bread flour, for more chew. With the cinnamon sugar variation, though, I find that the cinnamon-sugar browns/burns on the outside. I have covered the loaf with tented foil, but I am wondering if there's another trick to this?
