Naomi, bread can rise in the fridge as the cold temperature doesn't stop the rising action of the yeast. What it does do, however, is slow it down considerably. Most shaped breads can be left to rise in the fridge overnight instead of at room temperature for 1-2 hours. This recipe is a bit different, as it does call for a long result in the fridge to help develop the gluten before the dough is shaped. Check out the original recipe here for full instructions.
