We've got good news, Karen. It sounds like your loaves are close to perfect! The loaves don't tend to rise too much during the second rise--that's okay. One thing you may want to try next time to get better structure is shaping your loaves a little tighter. We have a great blog post that shows how to achieve a nice taut boule.
