Hi Barb Alpern, I have been baking this recipe for a while, but I now fear I misunderstood the loaf forming. After the first rise, I deflate, then three-fold, rest covered for 10 min, then three-fold again, then fold sides in and then fold sides in yet again (so I do the side-in-fold twice) then form the loaf. Am I ‘over folding’ too much?
