Hi Seth, I do use flour on my hands and work surface when I shape this dough, being careful to leave a clean spot on my work surface to help seal the bottom of the loaf properly. Try making a round disk for the preshape, with the smooth floured surface on the bottom, and the sticky part facing up. Let this rest uncovered for 10 minutes, and then fold over and gently tighten the seam. If this still doesn't work well for you, you might want to try making the recipe with our Bread flour instead of our Unbleached All-Purpose flour, which should yield a slightly stronger, less sticky dough.
