Hi Dave, this is meant to be a relatively dense, moist and chewy loaf of rye bread. Softer rye breads tend to be baked at a lower baking temperature and will also likely contain more white flour and more yeast. Some of these recipes also contain enriched ingredients like fat and dairy, which can contribute to a softer crumb structure.
