Made this for the first time last week to go with a batch of homemade pastrami. Was pleased overall (though, I regret that I skipped the ground caraway, won't skip that again). Overall, I was relatively pleased. My crumb appears pretty similar to what I see in your photos, but I found the bread to be a bit more dense than expected. I was hoping for a bit softer bread to go with my sandwiches. Is this density expected, or did something go sideways on me? If the former, any tips for my next batch?
