What a lovely, informative post! I'm afraid I have to take issue with one thing, though: I say every lovingly-prepared, "imperfect" loaf *is* a work of art. So-called perfection is boring. If we want perfectly uniform, perfectly boring loaves of bread, well, there's always the grocery store. Can't wait to see how this comes together...and one day I'll work up the courage to try making it myself!
