Stacy, potato starch would work well in place of cornstarch here, but arrowroot and tapioca work very differently and wouldn't have the intended effect. We're not familiar with sweet potato starch, but it would certainly be worth experimenting with if it's something you have on hand! Happy baking! Kat@KAF
