Ann, we think this could work as a cheesecake crust if you make it very thin. It will also be delicate: it has a melt-in-your-mouth-like texture, so take care when cutting slices and serving. You'll probably need a full recipe to cover the bottom of your pan. Happy baking! Kye@KAF
