No egg is necessary if the ingredients are used in the amounts listed here (we recommend measuring by weight using a scale for best results if possible). Some bakers have found the dough a bit dry and like the results when an egg was added; the cookies will be more cakey and less shortbread-like in texture if you make that adjustment. Happy baking!
