We recommend using powdered sugar in this recipe rather than granulated — while pulsing it in your food processor can work in some applications, for this recipe you'll want to use the real deal. Also, coconut oil may lead to more crumbly cookies. If you're committed to using it, be sure the oil is nice and soft and workable, and consider adding a bit extra until the dough comes together.
