I have had success making pumpkin chocolate chip cookies by spreading out the canned pumpkin puree on many layers of paper towels to soak up as much liquid as possible. I wanted to use as much pumpkin as possible for flavor, but without the moisture which makes pumpkin cookies more cake-like.
