Hi Bob, I think that might be a little hard to achieve, since adding pumpkin to a cookie recipe tends to introduce a lot of extra moisture that generally results in a rather cakey-textured cookie. While not exactly what you're looking for, we do have this Fudgey-Chewy Pumpkin Cookie recipe. This recipe calls for reducing the pumpkin, which helps eliminate some of the moisture. I think chocolate chips would be a lovely addition to this recipe.
