Hi Michael, I'm not sure why PJ allows the option for the butter to be straight from the fridge, but in practical terms it's a lot easier to mix a cookie dough together if you've allowed the butter to soften to room temperature, especially if you're mixing the dough by hand. I would go with softened butter.
