I disagree. The reason I keep coming back to KAF for recipes is precisely for articles like this. I want to know why things work and how changing ingredients changes the outcome. Please keep these enjoyable, enlightening blogs coming. I know I'm not alone in saying that many of us become better bakers because of them. Nobody is forced to read them.
