Hi there, SK! We wouldn't recommend replacing the butter in a cookie recipe with oil as you won't be able to cream the sugar with the oil which is what helps to create the structure for most cookies. If you'd like to make cookies using oil rather than a solid fat, we'd recommend checking out our Vegan Chocolate Chip Cookies recipe. We hope this helps and happy baking!
