Hi there, Alan! While we can't say for sure as we've not tested the recipe, the issue of the cookies not holding together well may be a result of too much sugar in the dough. Often times when using liquid sugars in place of granulated sugar, you only need about 3/4 of the amount called for — for more on this we'd recommend checking out our blog article Baking with liquid sweeteners. This may also help to make the cookie dough a bit more dry, yeilding a crunchier cookie. We hope this helps and happy baking!
