Due to some recent health issues, my doctor put me on the Whole 30 diet (actually this is a life style change and I don't adhere to this 100% now but stay pretty close). I'm just going to tell everyone I am a huge cookie monster (or was, for the huge part anyway after losing a lot of weight). Anyway, as a sugar substitute, we have switched to date paste and have found a wonderful browned-butter coconut cookie recipe. However, these don't hold together well unless they are kept in the fridge. I'm going to start experimenting with this to try and get a better version leaning toward more crunchy, but wanted to see if you might have any thoughts on how best to get there using date paste?
