I learned of this issue from an episode of America's Test Kitchen (From Grilled Steak and Fruit Tart - Season 18, Episode 19). They advise adding 2 TBL of water to the 10 TBL of browned butter when making the crust for for their Fresh Fruit Tart recipe.
