Grace, that's a great question! Sugar at room temperature seems solid enough, but once it gets into a hot oven, that sugar melts, turning into a liquid. And like any liquid ingredient, that causes things to spread out like a puddle. Sometimes that's exactly what you want, while other times you want a more upright cookie, so you can tweak the sugar content of your recipes depending on your preference.
