Try turning down the oven temperature by 15*F the next time you make smaller cookies. Check for doneness a minute or two early and see if those adjustments help recreate the texture of your perfect large cookies. (Keep your ingredients and recipe the same if you like the way the large cookies are turning out.) Good luck and happy baking! Kye@KAF
