Do you think using clarified butter would make a difference? I agree that bread flour doesn't make much difference. I've been using Alton Brown's chewy cc cookie recipe which calls for bread flour but I use AP flour (or sometimes part white whole wheat)--KAF, of course! I can't tell the difference.
