It will be a true experiment, as we haven't tested this as a gluten free cake in our test kitchen AND you'll be moving from white whole wheat flour to gluten free. If you're still willing to experiment, use 2 cups gluten free flour and 1/2 teaspoon xanthan gum, but know it's experimental. Happy baking! Irene@KAF
