I'm not much help, but I regularly use my KA for bread dough that uses probably less than 4 cups of flour (I make only one loaf at a time) and haven't had a problem. Pretty sure my machine is a 5, but I don't think it's "Professional". Perhaps the Professional line was built to handle larger batches. Can you buy the smaller bowl for your machine? That might help.
