Hi Joe. "Sponge" is one of the many labels that sourdough has, and you can certainly use your own sourdough starter to replace the sponge in this recipe. Simply replace the 4.25 oz flour and 4 oz cool water with 8.25 oz (or a heaping cup) of your ripe sourdough starter. Happy baking! Annabelle@KAF
