I really like your recipes. Have been looking for a cranberry raisin recipe for quite a while. I would like your opinion on this. To sit the sponge overnight on the counter to rise really wouldn't happen in most places with A/c etc. I read that you can turn your oven on at 75 degrees then turn it off when it reaches the temperature. You can then put your sponge in the oven and it will rise nicely, then you can get onto finishing the recipe. Thanks Ken alph
