Hi Josniko. The swirl is done in the pan before the final rise. The dough has its first bulk rise in a bowl, then is moved to the pan for the second rise. The swirl is done between these two steps. Cinnamon impeeds yeast growth, so adding it earlier, during the first rise, could potentially stop the dough from rising at all.
